I've made bimbimbap a bunch of times since having these bowls and I love how the rice gets so crispy around the edges where it sits on the stone! You get a lovely layer of brown, crunchy rice that adds some nice texture to the meal. Additionally, the bowls are great at retaining heat and keeping the food hot.
The wood that the bowls come are a nice touch but they're rather thin so the heat from the bowl will transfer to whatever surface it's sitting on, even with the wood as an intermediary.
The bowls are easy to clean - much like cast iron, you just need to use a little salt and warm water.
While you can make bimbimbap without a dolsot bowl, this definitely helps step it up in terms of taste and presentation
There are some things to consider, know a priori before ordering.
1) The proper seasoning of the granite bowl is crucial. More on this later.
2) The first shipment of the bowl came damaged. I had to return the item to the vendor and
order another set. I ordered total of 4 bowls second time and all arrived without damage.
The packaging is bit on the light side, and you may have to deal with the return. But, the return
was not much of hassle and went smoothly.
3) Not all the bowls will look identical. Some may have pronounced "veins", but that does not effect
the usability of the object.
Now, the seasoning. Make sure that you have about 4-5 hours of free time to complete the seasoning
of the bowls. The instruction on the steps and suggestions are included with the bowls.
First start boiling water in the largest pot that you have. Place required salt in the water.
I pot that I used was large enough to place all four bowls in. You have to make sure
that bowls are secured and does not move around in full boil. I used silicone hot plates
to separate the 4 bowls.
The next step is to clean the bowl (it may have granite dusts) and scrubbing brush.
Make sure during the entire process of seasoning and its subsequent use NO SOAP/Dish washing
liquid touches the bowl surface. Place the bowls into the pot and let is boil away for at least 30
Turn onthe oven. This step will dry out the bowls.
Take out the bowls from the water and place into the oven and let it dry completely. I left the
bowls in the oven at 350 for about 15-20 minutes.
Take out the dried out bowl and apply the first layer of the sesame oil I used basting brush
to apply the sesame oil. I mistakenly used the plastic basting brush, and the brush immediate
show the effect of the heated bowl. I used the silicone basting brush to apply the sesame oil.
I let the sesame oil soak in for about 15-20 minutes. Then reapply the oil and repeat 3 times
The bowl will turn dark grey and the bowl will be ready to use once this exhaustive process
is complete in about 5 hours. But, once seasoned. The burnt rice do not stick at all.
Overall, we have enjoyed this method of making BiBimBop. The take and texture is much
better than using the cast iron skillets.
It is well worth the time and money.

The bowls arrived right on time and with simple but complete directions for preparing, cleaning and using. They were well packaged and start out a beautiful light grey. I followed the instructions and it did take 2-3 hours for prep. During the prep process the bowls change to a darker grey-brown color which I love! The most fun was preparing our first bibimbap and, believe it or not, it was even better than at our local restaurant! We did a traditional veggie bowl with brown/white rice (brown for my husband and white for me) and our meals stayed hot until well after we were finished eating. I am already thinking of variations for out next use but will wait until the weather cools down a bit. I can tell we will use these all winter for bibimbap and for soup!

PS There is a metal ring around the outside of the bowl. Don't expect it to stay perfect as it will tarnish during prep and use. Just adds to the character!
Update: These bowls kept our modified bibimbap piping hot and we really enjoyed out veggie and ground beef over crispy rice with coconut amino based drizzle. We remain excited to used then weekly to keep out dinner routine far from routine. Eating from heated bowls will keep us warm all winter, I'm surethane. These are the best stone bowls we could find for a good price and we are very pleased.
