Initially when you get any cast iron vessel you must season it as per the instructions of the seller. Even if it is pre seasoned you must be careful initially.
1. Wash with mild detergent for the first time
2. Clean the surface and make it ready for use and rust free by using a clean cloth. Cotton or muslin preferably. Pat dry.
3. Apply oil on the entire vessel and not only the top. use your hands and rub it over nicely.
4. If u do not have an oven then use gas stove.
5. Now heat it properly on very low flame till it smokes.
6. Keep applying oil on center as it gets heated faster. Apply oil whenever necessary.
7. Now let it cool once it has smoked. Do not overheat first time.
8. Now wipe off with cloth once cool. Repeat process without washing or using water twice and then repeat with only oil on top for another 3-4 times.
9. This might take 2-3 days also depending how much you want to exhaust yourself.
10. Now you must ensure that after repeating 2-3 times you slowly make the tawa used to higher temperatures slowly and reducing it to low flame again. You must use oil liberally first few times.
11. Once this is done and you have attained the full flame with the tawa after repeating a few times then your tawa is seasoned.
12. You can use water in between when on full flame to reduce temperature at the center. Just sprinkle a little but be careful as this will cause it to sizzle and you might get hurt. Once water is burnt wipe with cloth carefully while on gas and apply some oil with a brush.
13. Take an onion cut in half and once the tawa is hot just rub the onion on the tawa. Now your tawa or vessel is ready to use.
14. Your dosas will never stick, they will never burn(just ensure your batter is good qualty) if cooking some other thing be careful to not use acidic stuff like tomatoes initially and later you may use it oncevessel is repeatedly used and a blackish layer has formed over it. While cooking put water in the center to avoid dosas burning and use oil always as the cast iron is prone to rusting.
15. For maintenance wash it only when it cools off and with hands just rub with water without detergent. If too greasy use cocunut fibre or plastic mesh to wash gently. Using aggressively will cause your vessel to spoil. Do not use steel scrubber.
Use warm water to wash always or dont was just wipe it with cloth if nothing is sticking and apply some coking oil, pat evenly and store in a safe place. It wont rust or get spoilt. Wash only when necessary. Maintenance of cast iron is really important.
If you follow these few steps your tawa wont break when you put it on gas or oven etc. You can season tawa in oven also. And the taste of the food that you cook in it will always be awesome(unless you are a bad cook)
