About this item

  • Josef Marc's flour range are traditionally milled by artisan millers and the entire flour range is produced from imported French grown wheat or with a blend of equivalent wheat varieties imported from other countries. Type T55 is ideal for making bread, puff pastries, croissants and baguettes. This flour gives a light open textured loaf with a crisp crust. It is medium in protein content, and when this protein is mixed with water it forms gluten.
  • Josef Marc French style T55 flour is non-fortified, unbleached and non-bromated, our farine de ble T55 bread flour is unbleached & contain high protein. T55 flour is equivalent to type 0 italian flour, euro 550 flour type and american all purpose flour. Our farine de ble T55 bread flour is used by chefs & bakers across the globe.
  • The 55 refers to the amount of mineral content that is left after burning the flour I.E. T55 has about 0.55% mineral content & protein content between 11.0% 12.0%
  • What is T55 flour? - French classification for flour is based on the resulting amount of residue left after processing 10 kg of flour in a 600ºc furnace. The 55 refers to the amount of mineral content that is left after burning the flour I.E. T55 has about 0.55% residual mineral content.

This flour cannot handle anything more than 65% hydration which is pathetic.
Normal store bought APF can take upto 72% water.
Sourdough bakers are going to be disappointed because what sounds promising in the description is actually a farce. No open crumb and I've gotten better results with normal flour. See pictures.
This is just very overpriced maida.
But the taste is actually not bad and the loaves did come out nice and soft and chewy.

Makes beautiful yum white bread loads with a soft white airy center and a strong chewy crust. Don’t listen to the internet Net flicks experts commenting on hydration and gluten strength and other BS. I make a loaf every week and it comes out perfect. 1.8 cups warm water, 3/4 tbsp sugar, 4 tsp dry yeast. Hydrate for 20 mins. Add 2 1/4 TBsp butter, 3/4 tbsp salt, 4.75 cups flour, Knead for 10 mins. Rise for 1 hour. Deflate and shape it and let it proof itself in a 1.5 Lb loaf pan for an hour. Bake for 30 mins at 160C. Brush top with butter (optional) and cool it covered with a tea towel for soft crust.
