This is a book which is all heart! It is amazing to read and I haven't been able to put it down! It holds the reader in thrall even if you do not share the same passion for breads as the author. Amazingly well written. The recipes are also extensive (though I did miss the burger bun recipe and I wish more stuffed bread recipes were there )!But that is really nit picking! The author talks about yeast and its type and various types of flours,which was really an eye opener of sorts! There are the usual type of breads like white and multi grain , but she has also covered croissant, doughnuts, pizza dough , focaccias ,artisan breads in the international group. Its the Indian breads which left me in a tizzy. The writer really deserves a standing ovation for her research in the latter group. There is a very touching anecdote about a Goan poder (thats Goan for baker,for the uninitiated like me).. What really irritated me was the condition of the book and its binding.This book deserved an A class treatment. Instead , you get a book which has been carelessly bound,thus destroying many carefully drawn sketches. The photographs too could have been more visually appealing.Thankfully,no art paper! But for the serious and not so serious baker,do get this book. You will not regret it.

It does what it says: makes bread baking a less intimidating process. And is the only baking source I've come across that is specifically written for Indian kitchens. As Koranne-Khandekar suggests, practise the white sandwich loaf as many times as you can to get comfortable with breads. In that recipe, I needed to increase the liquid content to approx 150ml (100ml water + 50ml milk) to get the right consistency for the dough. And if yeast is what is failing you in baking, and you don't have easy access to foreign yeast brands, try

Not much new info if you have been baking for a while. The book looked dull when it arrived but not damaged. Didn't feel like reading beyond first few pages at first but using it as a refresher, a few new and interesting facts given. Really wish they could have worked on the presentation and fotos and illustrations.

I had been waiting for this book since I had read about it in the Hindu. Having been in love with baking for long i had always wanted to make breads but the problem with the Indian climate is that many foreign recipes do not work here. This book is the answer to all such problems. It explains the details of bread making in the best and most understandable manner possible. Each ingredient on the bread is explained well and it gives a great idea on how to make breads. Unlike many recipe books I have read, this one had an explanation for each recipe by the author. And so many wonderful stories from the author's life about bread. It feels so personal and so beatiful to read. Great work!
